The “Al Frantoio” Gastronomic Research Laboratory is part of the “Nuovo Cilento” Agricultural Cooperative, inside the social oil mill in San Mauro Cilento. It houses a restaurant, which proposes the recipes of the ancient Cilento cuisine, prepared with the products of the members of local biodiversity and the Mediterranean diet.
The manager of the “Al Frantoio” restaurant is Serena Cilento, while the chef of “Al Frantoio”, Pierpaolo Cilento, also takes care of the land and gardens (9 hectares), directly managed by the Cooperative and which supplies the restaurant together with the various productions of the 2700 hectares of 400 members.
The gastronomic research laboratory, in the “Al Frantoio” restaurant, opens the doors of its kitchen to guests eager to know the secrets of the ancient Cilento recipes. So he makes his recipes available. To consult our recipe book click here.

HOW WE MAKE homemade pasta, bread, honey, cheese, sausages, oil, desserts.
SENSORY EDUCATION, with the tasting of oil.
THEMATIC DAYS, with the presence of experts, who show notions and instructions on: organic production, wine, oil, homemade pasta, field herbs, vegetable crops, meats, cheese, chestnuts, mushrooms, figs, typical desserts.
EXCURSIONS to discover the places of greatest naturalistic and historical interest in Cilento. Guided visits to the social oil mill, member companies, eighteenth-century wooden oil mills and the cultural and natural beauties of the Cilento land.
DIDACTIC FARM, with visits organized for students concerning food and environmental education, group analysis of oil, tasting courses, nutritional education, education on the biological process and on oil production with the Leopard Pieralisi Integral System.
